A warm blueberry muffin is one of my favorite baked goods of all time. The way the blueberries burst as you eat them, they’re just sweet enough, and so incredible with a little smear of salted butter. This recipe makes 2 perfect muffins, so you can always enjoy them fresh from the oven.
INGREDIENTS
53 g / ¼ cup light brown sugar
28 g / 2 tablespoons unsalted butter, melted
30 g / 2 tablespoons whole milk
35 g / 1 large egg white, at room temperature
2 g / ½ teaspoon vanilla bean paste or vanilla extract
60 g / ½ cup all purpose flour
3 g / ¾ teaspoon baking powder
pinch ground cinnamon
dash freshly grated nutmeg
1 g / ¼ teaspoon fine sea salt
90 g / heaping ⅓ cup fresh or frozen blueberries (do not thaw if frozen)
turbinado sugar, as needed for finishing

METHOD
1. Preheat the oven to 400°F / 205°C with an oven rack in the center. Lightly grease two cavities of a muffin pan with nonstick spray, or lightly spray the surface of the pan only, and line two cavities with muffin liners, or place two free standing muffin liners on a baking sheet.
2. In a medium bowl, whisk the brown sugar, melted butter, milk, egg white, and vanilla until well combined.
3. In a small bowl, stir the flour, baking powder, cinnamon, nutmeg, and salt to combine. Add the blueberries to the flour mixture and stir until they are well coated with flour.
4. Add the flour mixture to the sugar mixture, and stir well until evenly incorporated. Divide the batter between the prepared pan/liners. Garnish the surface of both generously with turbinado sugar.
5. Transfer the pan to the oven and bake until the muffins spring back gently in the very center, 20-24 minutes. Cool inside the pan for 5 minutes, then use a small offset spatula to gently loosen the muffin/liner from the pan, and transfer to a wire rack to cool completely.
